Mango Kulfi.
3 utterly sweet, extra ripe mangoes, squished to a pulp (kids' job here)
1 small box of cream
1 tin of Ideal milk
sugar to taste
crushed cardamon seeds, from 3 pods
3 dry roasted saffron strands, crushed
dump em all into the blender and blend (duhh)
pour into cake mould and freeze...take it out after an hour or two...blend again...and refreeze...
(mine never makes it to the second blend...kids just finish it before I can say "hmmm... I'm in the mood for some of that kulfi..."

i just want to ask, what sort of cream do we use? whipping cream or the one in the tin?

Cap'n...I use the whipping cream that comes in a box...the small one. The original recipe calls for a can of condensed milk tapi manis giler! So I simply add some sugar, sebab the mangoes are so sweet already. If its too thick add a little more ideal milk (evaporated) no more than another extra half a can (Im a cook who just campak tak ikut recipe...heheh improvise is the key!)
And remember to leave the kulfi out for about 5 minutes to soften, then cut it. Or you can use small shaped ice trays/individual molds.
Naz, I tgk recipe for strawberry ice cream sama...just leave out the cardamons and saffron...tambah half can ideal with sugar to taste...freeze it for 2 hours or until baru nak keras, then whisk again and refreeze...I havent tried strawberries...maybe you can first see how it goes.
Bad bad bad...:)..so tempting...
Now i need to make a dash to that middle eastern restaurant in Damai. But heck..tonnes of work to finish :(

Is kulfi a middle-eastern version of ice-cream? Mcm sedap je... but cardamom?? That's buah pelaga right?

cardamon is pelaga lah...tapi use the seeds only...
its Indian/Paki ice cream...sedap...banyak version, but I found this no-brainer one with little effort...tastes just the same! ;)
